In Greece, where the sea is never far and sunshine is abundant, the typical kitchen contains generous amounts of fresh seafood, vegetables, fruits, grains, herbs, olives and their oil. There are a host of key Greek foods - increasingly in demand outside Greece for their flavor and healthful quality -- that give Greek cuisine its distinctiveness.

The country of Greece is a rocky, mountanous landscape with limited fertile land. The Greeks had to use the cultivation of their landscape quite inventively in order to produce their Greek food. In some areas meat and dairy products played the primary role. In other areas olive oil, legumes and greens·were were the daily staple. The Mediterranean provided an ample supply of food for those Greeks that lived near the sea. The lack of fertile soil had another result: it formed the immigration as an important characteristic of Greek history. But immigrants, as merchants and conquerors, adopted elements from foreign culinary cultures and imported them to Greece. They imported new kinds of fruits and vegetables, too.

Long lasting conflicts, invasions and a four hundred year Ottoman domination also left their marks. For a very long time Greek food cooking was heavily dependent on its local products and religious dietary laws. Although international cuisine and other influences have adjusted the Greek diet, in some remote villages you can still find the tasty cooking which links to the culinary past...and it is in those tucked-away villages that you will find the finest Greek food!
