Fava Beans Recipe

Greek fava beans recipe

4 cups fresh fava beans
1/4 tsp sea salt
2 bunches coriander
1/4 cup Greek olive oil
2 small onions chopped
1/4tsp pepper
1/2 cup lemon juice
3 minced garlic cloves

Simmer fava beans with salt and 4 cups water in pot for 30 minutes stirring occasionally. Chop coriander-removing stems. Heat the olive oil in saucepan and sauté the onions for 5 minutes. Add coriander and sauté for 2 more minutes. Add cooked beans, pepper, 1/4 cup lemon juice, and 1/4 cup water to onions and coriander and cook for 5 more minutes. Pour the bean mix in bowl, add garlic and remaining lemon juice and mix briefly to combine.

Refrigerate for 3 hours.
