Cracked Wheat Salad Recipe

 

 

 1 cup cracked bulgar wheat

4 green onions chopped

1 cup chopped parsley

1 pint cherry tomatoes

½ cup olive oil

¼ cup greek vinegar

1 tsp minced garlic

Salt

Pepper

 

Soak cracked wheat in cold water to cover for 1 hour.  Meanwhile combine chopped onions and parsley.  Cut cherry tomatoes in half and add to scallion-parsley mixture.  Drain wheat and mix with greens and tomatoes.   Combine oil, vinegar, garlic, salt, pepper and pour.  Toss and let stand a while before serving.
